【摘要】:ThisEuropeanStandardspecifiesamethodforthedetectionofmeatcontainingboneandfishcontainingbone,whichhavebeentreatedwithionizingradiation,byanalysingtheelectronspinresonance(ESR)spectrum(alsocalledtheelectronparamagneticresonance(EPR)spectrum)ofthebones,see[1]to[11].Inter-laboratorystudieshavebeensuccessfullycarriedoutwithbeefbones,troutbonesandchickenbones,see[12]to[18].Sincetheradiation-inducedESRsignalisattributedtohydroxyapatite(see7.1),whichistheprincipalcomponentofbones,itisexpectedthatapplicationofthemethodcanbeextendedtoallmeatandfishspeciescontainingbones.Theseexpectationsareconsistentwithlaboratoryexperience(seeannexB).Thedetectionlimitdependsonthestateofmineralizationofthebones,whichisusuallylowerforsmallspecies(seeclause8).
